It’s Game On At Market

With the game season well and truly in swing, the artisan producers of Truro Farmers Market are in their element, with a wide variety of locally sourced meats to buy and street food menus showcasing the highlights of the season.

Venison, duck, rabbit, pheasant and woodcock are just a few of the seasonal offerings available from the green and white stripped stalls, which pop up in Truro city centre every Wednesday and Saturday, bringing grassroots local food producers to Lemon Quay.

Chris Perkins of the Cornish Venison Co. is a micro producer with a sustainable approach, focusing on traceability, provenance and low food mileage.

Chris is a big advocate of game as you might expect, saying: “Game in general is a superb food source, having so much flavour, very little fat and plenty of iron.”

The game Chris uses depends on the season but includes partridge, rabbit, snipe, woodcock, pheasant and pigeon as well as venison – these are all cooked fresh in a eclectic variety of dishes including Spicy Rabbit Burgers, Venison and Cider Sausages, Pheasant Curry and Venison Tartiflette.

Another producer bringing seasonal delicacies to market is Duchy Game, which sources quality game from Cornish estates, including Caerhays and Tregothnan.

Founded in 2012 by Scott Martin and Marc Dennis, Duchy Game can be found at market most Saturdays, with a selection of mixed game sausages and burgers which have a huge following locally.

The market is also the best place to shop for ethically reared local duck from The Cornish Duck Company, which is run by Roger and Tanya Olver from their farm near Fraddon.

Whole duck, breast, smoked duck, duck burgers and duck eggs can be purchased to create delicious meals at home; the company supplies some of Cornwall’s top restaurants and Roger and Tanya’s duck is highly prized by chefs.

Finally, discover game in the hands of a talented chef right in the heart of the market, at the @Home World Street Food stall; Harry Bartlett uses the produce of market stallholders to cook up a storm each week, with a menu which makes the most of the freshest seasonal ingredients.

Game season is one of Harry’s favourite times of year, as it allows him to get creative all sorts of tasty ingredients and come up with dishes like Venison Chilli and Pheasant Tacos.
