Speciality producer The Cornish Venison Co. is enjoying unprecedented levels of demand, as the popularity of this previously niche meat grows to new heights.
Micro-producer and licensed hunter Chris Perkins can be found at Truro Farmers Market most Saturdays, with a selection of steaks, burgers, sausages and street food featuring venison and other game including duck, rabbit and pheasant.
He has experienced a great start to the year, with renewed interest from shoppers at market, and recognition from the food industry and the media.
The Cornish Venison Co. was featured in a recent article in The Telegraph highlighting the resurgence of venison; national demand is reportedly up 400 per cent in a year, as more and more people discover the joys of this versatile and nutritious ingredient.
Venison is naturally low in fat, high in protein and contains plenty of vitamins and minerals; it’s a good alternative to other fattier meats and is full of flavour.
The versatility of venison is also being embraced as chefs, street food stalls and home cooks experiment with curries, pies, burgers, sausages, casseroles, pasties and pasta dishes.
Indeed Chris’s Venison and Game Burger was named ‘Streetfood of the Year’ by foodie blog Kernow Eats, and has also been nominated in the prestigious BBC Food and Farming Awards.
Chris is a traditional with a sustainable approach, focusing on traceability, provenance and low food mileage.
The game Chris uses depends on the season but includes partridge, rabbit, snipe, woodcock, pheasant and pigeon as well as venison – these are all cooked fresh in a eclectic variety of dishes including Spicy Rabbit Burgers, Venison and Cider Sausages, Pheasant Curry and Venison Tartiflette.
