Caitlin Walsh started Delea Fermented Foods in 2020 in a bid to introduce more people to the wonders of things like Sauerkraut, Kimchi, Kombucha and Curtido. With the help, encouragement and support of her mum (Delea is an anagram of her mum’s name, Adele, by the way!) Caitlin created recipes, bought all the equipment required, and began sourcing ingredients.

Caitlin uses as much local produce as possible, and all of her delicious creations are handmade in small batches. The core range includes Kimchi, Sauerkraut and Curtido – this is supplemented by seasonal specials depending on what veg is in season and therefore widely available.

Delea Fermented Foods can be found at our Truro and Falmouth markets, and Caitlin has lots of exciting plans for the future. She has already branched out into ‘make your own kits’ to help people start their journey in making fermented foods at home, and plans to run courses and workshops: watch this space!
